Directions

1. Whisk together oregano, 1 tablespoon of the rosemary, olive oil, lemon juice, garlic, salt and pepper. Add chicken drumsticks and toss to cover with the marinade. Let rest on the marinade 30 mins – 3 hours (you can leave this on the marinade overnight as well if you’d like).

2. Preheat oven to 375°F. Place the chicken drums in a large shallow casserole or cast iron pan and pour the remaining marinade over the drumsticks. Place in the oven and roast for 45 minutes, turning 3 times while cooking.

3. Remove from oven and let rest 15-30 minutes before serving. Sprinkle with the remaining tablespoon of minced rosemary before serving and feel free to serve with a few fresh lemon wedges as well.
