INGREDIENTS

  • 2 strips Belcampo bacon
  • 2 Pasture-raised, Organic eggs
  • 1 Tablespoon creme fraiche

STEP-BY-STEP

  • 1. Place strips of bacon in a cold cast iron pan. Heat the pan on medium heat.
  • 2. Cook bacon until crispy, flipping once.
  • 3. Remove bacon and set aside; crack the eggs directly into the skillet. Spoon bacon fat onto the eggs to while cooking
  • 4. Cook eggs to desired doneness and remove from pan
  • 5. Finish with a healthy dollop of creme fraiche and a sprinkle of fresh herbs.
