This is an easy and family-friendly dish that works well with any seasonal veggies and sausage you happen to have on-hand! The secret to the deliciousness of this dish (besides savory Belcampo sausage) is to cut all vegetables to approximately the same size for even tenderness and charring.

INGREDIENTS

  • Uncooked Belcampo sausage
  • 2 large red onions, peeled and roughly chopped
  • 3 carrots, peeled and roughly chopped
  • ½ pound Brussels Sprouts, halved
  • 1 parsnip (or potato), peeled and cubed
  • 2 Tablespoons Olive Oil
  • Salt + Pepper to taste

STEP BY STEP

      • 1. Pre-heat oven to 400°F
      • 2. Toss chopped vegetables in Olive Oil and sprinkle generously with salt +pepper
      • 3. Spread dressed vegetables on a sheet pan covered with parchment (an oven-safe cast iron skillet also works)
      • 4. Roast for 30 minutes
      • 5. Turn all vegetables one time, then place uncooked sausages in pan, among the vegetables
      • 6. Roast for and additional 30 minutes
