Add one diced onion, splash of sherry vinegar, ½ tsp cumin, 4 cloves garlic (chopped), large pinch oregano, large pinch of salt and cook 10 mins on medium
Add 1 cup bone broth, 3 tablespoons tomato paste, and 1 cup finely chopped carrots and celery, cook another 10 mins, meat should be moist and tender, if it's not, add more bone broth and cook a little longer
Peel 4 potatoes and slice thin with a mandoline, toss with 3 Tablespoons olive oil
Coat a large casserole with olive oil, pour in meat mix, tile potatoes on top. Bake at 400 for 15 then 350 for 35-45 mins more!! Filling should be bubbling, top should be crispy and shiny!! Let rest a good 30 - 60 mins before digging in.
