Sear 1 lb ground pork and 2 lb ground beef in 2 T olive oil until browned.
Add 2 c chopped onion and soften in rendered fat for 5 mins.
Add 1 quart tomato puree and 1 quart
water and braise 2 hours, adding additional water if needed to moisten.
Once cooking complete, if you want a creamier sauce, pulse once or twice
in a vitamix or cuisinart.
Melt 2 T butter and whisk in 2 T flour, cook over medium 2 mins.
Add 2 c milk and whisk until creamy, simmer 5 mins.
Add 1/2 c grated parmigiano, salt and pepper to taste.
Take a deep loaf pan and pour 2 T olive oil into bottom.
Layer in uncooked noodles on the bottom,
then a 1/3 inch of Bolognese sauce and two slices of provolone cheese.
Then add another layer of noodles and a 1/2 inch of the cheese sauce.
Repeat the sequence, until pan is full. Layer another 2 or three slices
of provolone across the top.
